    peeled and diced

  • 1 cup cucumber, diced

  • 1/2 small red onion, thinly sliced

  • 4 cups mixed salad greens or baby spinach

  • 1/2 ripe avocado, diced

  • 1/4 cup fresh cilantro and mint, chopped

  • Juice of 2 limes (about 3 tablespoons)

  • 1 tablespoon olive oil

  • 1 small red chili, finely chopped

    or 1/2 teaspoon chili flakes

  • 1/2 teaspoon salt

  • 1/2 teaspoon honey

Step-by-Step Instructions

Prepare the Produce

Peel and dice 2 ripe Sindhri or Chaunsa mangoes into bite-sized cubes. Dice the cucumber and avocado, thinly slice the red onion, and roughly chop the cilantro and mint.
