Genetics. Langra's chlorophyll degradation pathway is suppressed, so green pigments persist while sugars fully develop. Ripeness is judged by thumb-press softness, not color.

No — Dussehri Brix 17-19 is below Alphonso's 18-20 and well below Sindhri's 22-24. Dussehri is loved for delicate flavor and texture, not raw sweetness.
