Mango storage depends on stage: unripe stays on the counter to ripen, ripe goes in the fridge to pause, and excess goes in the freezer as pulp for the off-season.

Step-by-Step

Storage at the unripe stage — counter only
Place unripe mangoes in a single layer on the counter, stem-side down, away from direct sunlight. Room temperature 25-30°C is ideal. Never refrigerate unripe mangoes — cold permanently stops ripening.

Storage at the ripe stage — fridge for 3-5 days
Once a mango gives to thumb pressure, transfer to the refrigerator (12-15°C in the crisper drawer). This pauses ripening and extends shelf life by 3-5 days. Bring to room temperature 30 min before eating for best flavor.

Cut mango storage
Cut mango stays fresh in an airtight container in the fridge for 2-3 days. A squeeze of lime juice prevents browning. Don't freeze cut mango chunks unprotected — they get freezer burn.

Freeze mango pulp for off-season
Peel ripe mangoes, blend pulp until smooth, portion into 1-cup ziplock bags (squeeze out air), freeze flat. Pulp keeps 8-10 months at -18°C. Thaw overnight in fridge for smoothies, lassi, or ice cream.

Refrigerated ripe mangoes: Anwar Ratol 5-7 days, Sindhri 7-10 days, Chaunsa 7-10 days, White Chaunsa Nawab Puri 14-21 days (export-grade). Langra is the shortest at 5-7 days due to thinner skin.

Can I freeze whole mangoes?
Whole frozen mangoes get watery and mushy on thaw because cell walls rupture. Always pulp before freezing for 90% less waste.
Why are my mangoes going bad in the fridge?
Most likely they were over-ripe before refrigerating, or the fridge is too cold (below 8°C causes chilling injury). Aim for 12-15°C in the crisper, not the main shelf.
How long does mango pulp last frozen?
8-10 months at -18°C in airtight ziplock bags with air squeezed out. Beyond that, flavor degrades but it's still safe.
