Ingredients
3 large ripe mangoes (Sindhri — 500g pulp)
1/2 cup sugar
1/2 cup water
2 tablespoons fresh lemon juice

Instructions
Make Simple Syrup
Combine sugar and water in a saucepan. Heat until sugar dissolves completely. Let cool to room temperature.
Blend Mango
Peel and chop the mangoes. Blend until completely smooth. You need about 2.5 cups of puree. Sindhri creates the smoothest, sweetest sorbet.
Combine
Mix the mango puree, cooled simple syrup, lemon juice, and salt. The lemon brightens the mango flavor and the salt enhances sweetness.
Churn or Freeze
If using an ice cream maker: churn according to manufacturer instructions (about 20 minutes). If no machine: pour into a shallow pan, freeze for 1 hour, scrape with a fork, repeat 3-4 times until smooth and scoopable.
Serve
Scoop into bowls. Garnish with fresh mint, a squeeze of lime, or mango cubes. Sorbet is best consumed within 1 week.
