Ingredients
1 cup mango puree (ripe Sindhri or Chaunsa)
1/2 cup ketchup
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
Salt to taste
Instructions
Combine
Add all ingredients to a medium saucepan. Whisk until smooth and well combined.
Simmer
Bring to a gentle boil over medium heat. Reduce to low and simmer for 15-20 minutes, stirring occasionally, until thickened.
Taste & Adjust
Taste and adjust — more sugar for sweeter, more cayenne for heat, more vinegar for tang. The mango sweetness should be the star.
Cool & Store
Let cool to room temperature. Transfer to a glass jar or squeeze bottle. Refrigerate for up to 2 weeks.
Tips
Smoking Level
For a deeper smoke flavor, add 1/4 teaspoon liquid smoke or use chipotle powder instead of cayenne. The smokiness pairs beautifully with the sweet mango.
Use As
Glaze for grilled chicken, ribs, or shrimp. Dipping sauce for fries or onion rings. Burger sauce. Pizza base for tropical BBQ pizza.
